At the helm of Donato’s kitchen is Executive Chef Takeshi Horinoue, whose mastery of Italian culinary technique is matched by his precision, creativity, and deep respect for ingredients. His approach is grounded in tradition — but never bound by it.

Each day begins with handmade pasta, fresh market produce, and meticulous attention to detail. Whether it’s a classic like cacio e pepe or a seasonal special finished with truffle, every dish is prepared with intention, balance, and beauty.
